If you're on Instagram on Sundays and are interested in food and especially breakfast, then you won't miss the numerous pancake posts - I just say #pancakesunday. I can definitely understand the trend of treating yourself to pancakes for breakfast on Sundays.

On the one hand, I generally love pancakes and anything that consists of dough in any way. And on the other hand, Sunday is one of the few days of the week where you generally don't have any appointments and can therefore simply take a little more time than usual. At least I feel that way.

That's why I can only encourage you to try this wonderful and incredibly delicious Dutch Baby recipe. The term probably means nothing to most people at first - I only came across this great dish by chance a few months ago.

In any case, it is a large, thick pancake that is baked in a pan in the oven. I like the way it's prepared because I'm just way too impatient for the little round pancakes and the kitchen doesn't look like a bomb has exploded afterwards. You can also garnish it wonderfully with your favorite toppings. For example with quark, Greek yogurt, berries, banana, nuts, nut butter, cinnamon, maple syrup, honey and so on - there are no limits to your imagination.

As always, I try to avoid processed sugar in my recipes. I also usually use spelled instead of wheat flour, coconut oil and have replaced cow's milk with a plant-based alternative. I love the taste of coconut, which is why I prefer this form of fat. I really like cow's milk, but I don't tolerate it very well and so I prefer oat or almond milk.

Baking time: 17 minutes

Servings: 2

Ingredients:

3 pieces of eggs (M)
160 ml milk or plant-based drink
75 g spelled flour
1 tbsp maple syrup (honey can also be used as an alternative)
1 pinch of salt
1 tsp cinnamon
1 tbsp coconut oil

Preparation:

Preheat the oven to 220° degrees (top/bottom heat) and place a baking-stable pan in it. Mix all the ingredients except the coconut oil until foamy. As soon as the oven has reached the specified temperature, brush the mold with the coconut oil and pour in the dough. The baking time is approx. 15-17 minutes - do not open the oven during this time. Divide the finished pancake in the middle and garnish with your favorite toppings (e.g. berries and quark).
