The juiciest banana bread in the world (really)
Banana bread – some people love it, others don’t. It can be used in so many different ways, is very easy to prepare and is ideal as a take-away snack (meal prep).
Surprisingly, a juicy banana bread recipe contains a particularly large amount of bananas ;-), which are one of the most nutritious and healthiest fruits. They are therefore great sources of energy, which should be of particular interest to the “top athletes” among us. In addition to sugar and fiber, bananas also contain the two minerals magnesium and potassium as well as the four trace elements iron, zinc, calcium and phosphorus. In this way, they support muscle and nerve functions, the electrolyte balance and help the body generate energy. On paper, everything speaks for treating yourself to the pleasure of banana bread on a regular basis.
Banana bread also has many benefits and can be eaten at any time of the day. It's a great way to use ripe bananas that might otherwise go to waste. Another advantage of banana bread is that it is very easy to make and does not require complicated ingredients. You often already have most of the ingredients for banana bread at home. It is also a versatile pastry that can be eaten as breakfast, dessert or as a snack between meals.
The delicious bread can also be adapted to individual dietary needs. For example, it can be made with gluten-free flour for people who suffer from gluten intolerance. It can also be adapted for vegans and vegetarians by replacing eggs and butter with alternatives like flaxseed and coconut oil.
Banana bread can also be served in different ways. It can be eaten plain or spread with butter, peanut butter, honey or jam. It can also be sliced and topped with cream or whipped cream to create a delicious dessert. I even like to eat it with cheese.
By the way , banana bread has a long history and first became popular in the USA in the 1930s. During the Great Depression, it was a cheap and easy way to use ripe bananas instead of throwing them away. In recent years, banana bread has become popular again thanks to social media and the growing popularity of homemade, healthy and easy meals.

Servings: 1 bread
Ingredients:
2 eggs
2 bananas overripe
1 tsp cinnamon
1/2 tsp cardamom
1 tsp ginger (powder)
some grated lemon peel
30 g maple syrup
1 pinch of salt
40 g tender oat flakes
60 g almonds, ground
100 g spelled flour
3-4 tbsp walnuts and hazelnuts, chopped
2 tbsp raisins
50 ml milk
80 g quark 20% or yoghurt 3.5%
Preparation:
Mix the two eggs until foamy, mash two bananas with a fork or a mixer and mix with the lemon zest, cinnamon, cardamom, ginger and maple syrup.
Mix a pinch of salt, oat flakes, ground almonds, wholemeal spelled flour, baking powder and mix in the chopped nuts. Optionally and of course to taste you can add raisins.
Mix the milk with the yoghurt and mix alternately with the dry mixture from part 2 into the egg-banana mixture from part 1.
After the dough has been mixed with the mixer or food processor for about 4-5 minutes, it is placed in a bread baking pan greased with coconut oil. Optionally you can also use butter. On top, press both parts of a banana cut in half lengthwise.
Preheat the oven to 180 degrees Celsius (fan oven) and bake the bread for approx. 35-40 minutes. bake. Be sure to do a sample.
Let the bread cool and ideally wrap it in a tea towel.
Note: The bread will easily keep for 5-7 days.
